Active forms of oxygen are produced in the biological system of the organism and are inactivated in the biological system on a stable basis during its operation. These molecules are known as free radicals.

The organism uses the free radicals to the function of immune. In ideal conditions free radicals are kept in equolibrium and balance of production and of inactivation of them. The oxidative stress is the imbalance between the production of active forms of oxygen and the ability of an organism to inactivate them.

Active free radicals, through the blood-stream, are channeled into the body ‘s organs and tissues. Free radicals penetrate the cells and have a negative effect on the whole organism, with main consequence, the premature aging of the vital organs of the organism and consequently distrubances in its vital functions.

Polyphenols are collectors of free radicals with a beneficial effects against oxidative stress and its effects.
